Ravioli & Tortelloni Workshop


Adult Enrichment / Food & Drink -
Winter 2026

Step into the kitchen and explore the delicious world of stuffed pastas. Learn how to fold and shape tortelloni and ravioli with a variety of pre-made fillings. You’ll make Ravioli Cacio e Pepe, Mezze Lune Ricotta e Spinaci, and Tortelloni alla Mantovana. Discover the traditions behind each shape and learn about the Italian regions where they originate. End the evening savoring a farm-to-table pasta dish made with locally sourced ingredients, and leave inspired and confident to make handmade stuffed pasta at home.

Please note that this class is not a good fit for those who cannot consume gluten. 

Instructors

Avery Perry

Avery Perry has been in the pasta manufacturing industry for over a decade. For the past five years he has been head chef, general manager and lead cooking class instructor at Seven Hills Pasta Co. Avery has taught cooking classes throughout the greater Boston area including with the Trustees and the Boston Public Market. 


Ethan Zhu

An Arlington resident, Ethan is the head pasta maker at Seven Hills Pasta CO. overseeing all aspects of production: from the bronze extrusion to the delicate balancing act of slow air drying. Not only is Ethan an expert all things pasta, he is also a master of shaping traditional Chinese dumplings such as gyoza, and leads classes teaching this skill. Ethan is also the owner of Ying Ramen, a small batch producer of artisan noodles.
