French Macarons
French macarons are delicate and colorful almond confectioneries that can be a sweet ending to a meal or a perfect pick-me-up in the afternoon with a cup of tea or a glass of champagne. We’ll dispel the myth that they are difficult to make. Learn step-by-step techniques to make the macaron shells and two fillings, including a rich chocolate ganache and a silky vanilla buttercream.

Evelyn Schichner has been interested in baking and cooking all of her life. However, it was first watching Julia Child on PBS that cemented her love of French cooking. Julia not only offered authentic French recipes but she showed how you could have fun in the kitchen—something Evelyn practices to this day! A few decades ago Evelyn attended a week-long cooking school in Arles, France, and later she attended a week-long class in Paris where she was introduced to classic French cooking. Now she travels regularly to both Paris and the Provence region to take classes. Her knowledge and her library of recipes are continually expanding with each trip. She has been able to adapt the recipes and learned techniques to the American kitchen and is eager to pass on her knowledge to her students, all while having fun, of course!
