Edible Art
Explore four mediums with which one can craft edible art: sugar (isomalt), chocolate, gum paste, and potato starch paper (also referred to as wafer paper). We’ll cover topics such as the molecular structure of the compound disaccharide known as isomalt, the science behind the tempering of chocolate, and coloring options ranging from edible markers and luster dust to colored cocoa butter. Then you will create pieces of edible art to take home and get tips on how to display and preserve your work.
